Healthy Peru-Inspired Salad Recipe

While I was in Peru, we were so fortunate to have our own chef at the retreat center. My favorite meal of the day was lunch because she always put out a homemade soup, and massive salad bar with tastebud exhilarating veggies such as cucumbers, beets, carrots and avocados as big as my head!

Since I’ve been home, I’ve been re-creating these amazing vitamin/mineral, protein and anti-oxidant rich salads and wanted to share one of them with you.

Peru Inspired Healthy Salad

Here are some reasons why this Peru-inspired salad is good for you…

(Note: I don’t claim to be a nutrition expert, but I am an information whore when it comes to clean healthy food, so the following was compiled from the resources that I trust, listed below)

Onions & arugula (rocket)-
High in sulfur, a beautifying mineral which cleanses the liver and skin

Quinoa –
1 cup = 9 grams of protein

Avocado- 
10 grams protein in just one
Rich in monounsaturated fat that is easily burned for energy
High in potassium (more than twice amount in banana), which helps balance your sodium to potassium ratio
Vitamin E, B-vitamins & folic acid
Fun fact: one of the safest conventionally-grown crops (which means you don’t need to buy organic, unless you want to)

High amounts of anti-oxidants, fiber, vitamins A, C & K, potassium and manganese

Parsley and cilantro (coriander)-

Lemon-
187% daily recommended value of vitamin C (super infection fighter)
Free radical zapping, aids in digestion

Red wine vinegar –
Supports digestion and regulates blood sugar

Olive oil –
Antioxidants (anti-inflammatory), vitamin E
